Over a matter of a few decades, we have forgotten the basic skills that had, for thousands of years, enabled us to feed ourselves and our families We have now become reliant on huge companies to prepare our food for us with their only motive being to make money. To gain market share and increase their profits they have developed practices that enable them to get food to the consumer at the lowest price possible. Sadly, this price does not reflect the true cost of these products which is borne by our environment and our health care systems.

Out-dated dietary advice is embedded in our society and governments, unwilling to wage war on the hugely powerful protagonists of the food industry, allow the situation to spiral further out of control. The health of the population worsens, the environmental crisis deepens and the skills and knowledge required to turn things around get further lost in the mists of time.

I want to remind people of the simple pleasures of food and the simple skills required to prepare a meal that is healthy for you and the environment. It’s a time to cook.
